The fineness of your powder directly influences the silkiness of your drink, making sieving your matcha a crucial step to not skip. Our matcha is ground into the finest powder by our stone-mills, but can naturally clump together when packaged. To get the best results, sieve the desired amount each time before each preparation.
Our hand-hammered sieve is made with a dual-layered structure – a fine outer mesh and an even smaller inner mesh, crossing over each other. This design lengthens the sieving process slightly, but results in an incredibly smooth powder. See the act of sieving as part of the ceremonial and unhurried preparation
